Due to the recent explosion of interest within food and cooking there is a segment that needs to be addressed.

The understanding of the chemical and physical principles that determine the properties and behavior of

ingredients and the way the processes work when applied.

The science behind both the ingredients themselves and the methodology that we use to prepare the food along with the required organization necessary is important for one to understand.

Combining today's technology and the way that it is put to use can be a little perplexing to both the home and  professional cook.

Quite often the problems can begin at the market place with incorrect choices of ingredient combinations.

Having spent a considerable period of time teaching students at a very well known and respected culinary

college, it is time to share some of the teachings on this site.

There are a couple of teaching methods that can be employed here, the first obviously is college teaching,

closely followed with that of the grass roots experience forum. Couple both together and there is a wealth of information that can be shared with everyone.

If one takes the approach of utilizing both experiences together then the task of explanation becomes quite

logical and much easier to comprehend. The college method of approach will attempt to supply the answers before anything has happened, whilst the experiences of life will create situations that will crop up out of

the blue and need an immediate resolution on the spot - rather a tandem of having to think on ones feet and

be able to react quickly when necessary

What if one was able to control those issues and have peace of mind during selection - then preparation and finally the

cooking process? Wouldn't that be wonderful to say the least.

Just think if one did not have to ingest a book prior to preparing food or adversely plow through an

encyclopedia of information to find an answer in a timely manner.

The following is a series of scenario's with appropriate answers that I hope will be helpful to the viewer.
